Cheese Cake

This Cheese Cake is the kind my Son-in-Law wants hidden at the back of the Fridge. You have to pass a strict worthiness test to be eligible to get a piece of this one...and it is easy (coz that's all I know) and no-bake (even better)....the crust is yummy too..plate licking even..just saying.




Buffs Cheesecake

1 8 oz pkg. cream cheese softened
¼ C lemon juice more or less to taste
1 can sweetened condensed milk
1 8 oz tub cool whip
                                                                                       1 tsp vanilla (optional)
Graham cracker/ginger snap crust
1 can of cherry pie filling or favorite fruit topping

My crust is made with 1/2 sleeve graham crackers crushed  and equal amount of ginger snap cookies crushed, then pour 1 stick(1/2 C) of melted butter  on top, and mix well. Then press crumbs into the bottom of a 9x13 pan & freeze for 10 minutes while you make the cheesecake.
Soften cream cheese in microwave or room temperature, then add lemon juice & beat till smooth. Add sweetened condensed milk and beat till smooth. Then add cool whip till smooth and pour into crust and chill if you can wait that long. Pour cherry or blueberry or fresh raspberry' s or strawberry's (whatever your favorite may be) on top.
Sets pretty quick.  Tastes great the next day if there's any left by then.

"Pin"spiration: Masking Tape Speedway


This was one of my very first pins on Pinterest.  I thought it looked so cool and I knew that my boys would absolutely LOVE something like this!  (I've tried to find the original source but never could.  :/ )

Thursday was Landon's 5th birthday so I thought it would be the perfect time to do it. It was such an easy project and very cheap.  I used one roll of masking tape that I got for $1.99 at Target.  On Wednesday night my husband made the tracks (and I "decorated" it with signs & trees from our train sets) so that it would be a surprise on Landon's birthday morning.  He (and the rest of my kids!) loved it and played with it all weekend long.

Raspberry Angel Dream Dessert

My boss brought this into work for us to try....
                                    Oh my goodness this huge dessert is divine & only 90 calories....


It looked really good, but it tasted sooo much better than it looked, and each portion was 1/5 of the sugar free Angel Food cake. She said for 2 weeks they ate it every night for dessert on their diet, and they lost weight. They never got sick of it because it was so filling and yummy. Finally after 2 weeks she felt like she was finally willing to share some with us, and we were so glad she did. Everyone of us ate the whole thing...
It is such a quick and easy dessert to make. Here's her recipe and thanks a bunch Peggy..

1 9oz Sugar Free Angel Food cake (in the WalMart bakery) ask if you can't find it, it may be in their freezer.
1 Lg. tub Lite Coolwhip
4 cups Fresh or frozen Raspberries
1 Tbsp.Splenda

Combine thawed raspberries and splenda and mix thoroughly. Spoon some raspberry mix on top of 1/5 of  the Angel Food cake and top with Coolwhip and enjoy. Just looking at the photos gives me warm fuzzies..

Leprechaun Lamingtons

I thought it might be fun to make Lime flavored Lamingtons for St. Patrick"s Day , being that I love the raspberry ones so much,  and the taste testers agreed they were pretty yummy and delicious looking.
 They were easier to make than I thought they would be, so here's the recipe. Make them a day early, they taste great the second day!!!




1 small pkt Lime jello
1 1/4 cups boiling water
Sponge cake or white or yellow cake
2 cups dessicated coconut or dehydrated coconut
1 Can spray whipping cream
Garnish

Dissolve jelly crystals completely in hot water, and put in fridge to cool and set slightly.
Cut off any dark edges from the cake and cut into serving sizes. Put coconut in a square dish.
Dip all sides of each piece of cake in cold jelly mixture and then roll in the coconut to coat.
Cut a slice at the top and spray whipping cream down the slice and garnish with whatever green treat or jelly bean you may have.

Jalapeno Jelly St. Patty's style

"Top Of The Mornin' To Ya"...yes,....it's not Irish but it sure looks the right color and is soooo quick & easy to make, and would be a fun snack to add to your St. Patrick's day celebrations.....

                                                                    
  • 1 cup canned Jalapeno, remove seeds (or leave some to heat up the flavor) and membranes,
  •                                                                  finely chop
  • 1 1/2 cups Apple Cider Vinegar
  • ½ - 1 C Green Bell Pepper, seeds & membranes removed, finely chopped
  • 6 cups Sugar
  • 2 envelopes Liquid Pectin, 3 Oz Each
  • Few drops of Green food coloring
                    
Tastes great on homemade bread, over cream cheese with crackers, or even on meats.

Preparation:
  1. Sterilize jelly jars and lids according to manufacturer’s instructions.
  2. Combine the bell pepper, and jalapeno peppers in a saucepan with the sugar and cider vinegar. Bring to a boil over medium-high heat, and boil rapidly for 1 minute. Remove from heat and let stand for 5 minutes.
  3. Stir in the liquid pectin, and add a drop or 2 of green food coloring. Pour the strained liquid into sterilized jars, and turn jars upside down so the heat will help the metal lids to seal.

Mini Key Lime Cheesecakes in 5 minutes



I needed to quickly find an appropriate reward, that would encourage the boys, to get some projects done for me, much sooner than later, so I whipped up their favorite dessert in a convenient snack form, that prompted them to move fast on my projects, and we all got what we wanted in a short period of time.



                                                  I couldn't believe how quickly they devoured them...




Place a paper cup cake liner inside each cup cake pan, and place a ginger snap cookie in the bottom of each cup cake liner and set aside.















In a large bowl combine the cream  cheese, sweetened condensed milk, and lime juice till well blended. Stir in the vanilla then add the whipped topping till thick and smooth. Add drops of food coloring to desired color. Immediately pour some lime filling on top of each ginger cookie and garnish.





 Place in the freezer to cool for about 15 minutes. You can eat them immediately, but they need to be stored in the fridge or freezer. These freeze well, so you can make them ahead of time.

Mini Key Lime Cheesecakes (No Bake)

1 pkt. Ginger Snap cookies (the easiest crust you'll ever use)
1 8oz pkt. softened cream cheese
1 Cup bottled or fresh Lime Juice
1 can sweetened condensed milk
1 tsp vanilla flavoring
1 12oz tub frozen whipped topping
green food coloring (about 2 drops)
 Lime slices or garnish

Chocolate Truffle Bundt Cake

Sooo Yummy but sooo Easy.....Chocolate Truffle Bundt Cake, just fill the center with the excess warm frosting. Then fill your mouth with a deliciously warm chocolate rush with  a large scoop of ice cream or cool whip on top.The day after when it is cold, just zap it in the microwave for 10 seconds & back comes the fresh baked chocolate rush again. Always a favorite at work or family event's. Sorry I am a Chocoholic enabler, see recipe below.
Whip up & pour into your bundt pan, it's prettier this way.
Cool till it is warm & easy to handle

Chocolate Truffle cake

1 Chocolate cake mix
1 small pkt. instant Choc. Pudding
1 bag chocolate chips
16 oz Sour cream
5 eggs
1 stick melted butter
1 tub of Pillsbury chocolate frosting heated (remove foil lid)

Mix by hand (it is a rather heavy dough):
Mix dry ingredients.  
Add chocolate chips to dry ingredients so they won't sink to the bottom.
Add sour cream, eggs, and butter. Mix well. Pour in greased Bundt Pan.
Cook 50 min.  350 deg.


When still a little warm, Pour 1 tub chocolate frosting that has been
heated in microwave for approx. 30-40 seconds.

Then pour warm frosting on top & in the middle as a bowl for the excess.


Now decorate it so it is irresistible.

Chocolate Cake Batter Pancakes



Pancakes


1 c. pancake mix
1 c. chocolate cake mix                                                  We found this recipe from here and decided to
1 c. buttermilk (recipe HERE)                                     make it a little different.
1 tsp. vanilla
2 eggs

* can use milk in place of buttermilk



We decided to try out a few different toppings to which we liked best. We cut up some fresh bananas and put fresh raspberries on top. Then we dusted it with powdered sugar. This was our healthiest option.




We did the same 3 steps from the first one and then added some cream and drizzled chocolate sauce over the top. This was by far my favorite!




We made a frosting glaze from:
1 c. powdered sugar
1 1/2 tsp milk
1/2 teaspoon vanilla
We then sprinkled the top with some Valentine's sprinkles for the kids. They loved the pancakes this way. They were eating them faster than we could make them!




Chocolate pancakes is a fun way to change it up every now and then or for special occasions! We will definitely be making these again in our house!

Smoked Fish Crescent Rolls

Try these ideas for your next party....I needed a quick recipe, with several ways to use the few ingredients I had on hand, and yet make it look like I planned it that way. Easy & Elegant...just saying

Here's what I came up with using "Smoked Fish Dip"




1 - Filled Crescent Rolls





3 - Broiled stuffed Mushrooms

"Smoked Fish dip"

1 8oz  pkg Cream Cheese
1 Can Brunswick Golden Smoked Seafood Snacks

Heat cream cheese in microwave (approx. 30 sec.) till soft enough to blend the fish smoothly with a fork ,  then use dip in your favorite treat. Enjoy !
Brunswick in the Gold Can.

Place a teaspoon of dip on crescent roll dough and cook according to directions on the can of rolls.
